Chrysalis Barrel Aged Beers are inspired by time honored traditions, using locally grown ingredients aged in oak barrels to create our own Farmhouse style.
The Brewery is located in Paonia Colorado, a town steeped in community values and historic traditions. Along with ranching and coal mining, Paonia has continuously proven itself to be a major hub of agriculture in the state of Colorado. We have the highest percentage of organic farms and orchards per capita in the state of Colorado. Besides growing our own barley we rely heavily on the surrounding orchards and farms to source the best ingredients available to create an “Origin Beer” which is unique and unlike any other beer in the state. Our beers and flavors start from the ground up right here in the North Fork Valley.

Backed by a kickstarter campaign, we founded Chrysalis Brewery in September 2018.
Ever since reading Michael Jackson’s Great Beers of Belgium book in 2009, Shawn has dreamed of founding a brewery in Paonia. Frederick and Shawn had many conversations about making this dream a reality but when Adam came to them asking about growing barley for beer brewing, they knew this could be their shot.
Currently, Chrysalis has their Federal Brewers License and are working on their state application now. They have a perfect location for brewing, aging and tasting in Paonia with 150 oak barrels of our own barley beer aging right now. The team of three have the right combination of skills and motivation to make some amazing beer.
